If you are as fussy as my family than you might need to plan in advance and search Indian restaurants. Some in which we ate during our visits to Vegas or heard were good:
Tamba (frankly didn't like it but it's right on the strip)
India Oven
Gandhi Cuisine
Mint Indian Bistro
Samosa Factory
Namaste Indian cuisine
Origin India Restaurant
